Ingredients

Pumpkin layer
  • 1 can (15 oz) pumpkin puree
  • 1 can (12 oz) evaporated milk
  • 3 eggs
  • 1 cup granulated sugar
  • 2 tsp pumpkin pie spice
  • 1.5 tsp cinnamon
  • 0.5 tsp ginger
  • 0.25 tsp cloves
  • 0.5 tsp salt
Cake topping and finishing
  • 1 box (15.25 oz) spice cake mix (dry)
  • 1 cup unsalted butter, sliced thin
  • 0.25 whipped cream and cinnamon for serving

Equipment

  • 1 sheet pan

Method

Prep
  1. Preheat the oven to 350F and grease a 9x13 baking dish so the custard releases cleanly later.
  2. Whisk pumpkin puree, evaporated milk, eggs, granulated sugar, pumpkin pie spice, cinnamon, ginger, cloves, and salt until smooth and evenly combined.
  3. Pour the pumpkin mixture into the greased dish.
Dump and bake
  1. Sprinkle the dry spice cake mix evenly over the pumpkin in an even layer—do not stir.
  2. Cover the entire surface with thin slices of unsalted butter, leaving no gaps so the topping crisps and browns.
  3. Bake for 45-50 minutes at 350F until the top is deeply golden and the bottom layer is set.
Serve
  1. Cool for a few minutes, just until it firms up slightly and can be served warm.
  2. Serve with whipped cream and a dusting of cinnamon.

Notes

For clean slices, let the dump cake cool 10–15 minutes after baking so the set bottom layer holds its shape. Store leftovers covered in the refrigerator for up to 4 days; rewarm individual portions in the microwave until just warm. Freezing is not recommended because the pumpkin custard can become watery after thawing. If you want a dairy-light option, substitute evaporated milk with a plant-based evaporated-style milk, keeping the rest the same.
