Ingredients

For pumpkin mousse
  • 8 oz cream cheese Softened
  • 1 cup pumpkin puree
  • 1 cup powdered sugar
  • 2 tsp pumpkin pie spice
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 8 oz whipped topping Cool Whip, thawed
For decoration
  • 24 Oreo cookies Crushed into crumbs (the dirt)
  • 1 candy pumpkins or gummy pumpkins For pressing into the Oreo dirt
  • 1 green candy or gummy worms For poking out of the dirt
  • 1 pretzel sticks As vines

Method

Make the pumpkin mousse
  1. Beat the cream cheese until smooth, then add the pumpkin puree, powdered sugar, pumpkin pie spice, cinnamon, and vanilla and mix until fully combined. Keep mixing until no lumps remain and the mixture looks evenly orange.
  2. Fold the whipped topping into the pumpkin mixture until smooth and fluffy. Stop as soon as the white streaks disappear so the mousse stays light.
Assemble the cups
  1. Layer in clear cups with pumpkin mousse — Oreo crumbs — pumpkin mousse — and finish with more Oreo crumbs on top. Press the crumbs lightly so the “dirt” looks packed rather than floating.
  2. Refrigerate for 1 hour to set the layers. Chill until firm enough that the mousse holds its shape when the cup is gently moved.
Decorate
  1. Decorate by pressing candy pumpkins into the Oreo dirt so they peek up from the soil. Arrange them at slight angles for a “patch” look.
  2. Stick green gummy worms into the dirt so they poke out from the top layer. Push them in just far enough to stay upright without sinking.
  3. Place pretzel sticks as vines across the top of each cup. Position them to lean naturally against the pumpkins and crumbs.

Notes

For the neatest layers, crush the Oreo cookies into a sand-like texture (not dust) so the “dirt” visibly stacks. Keep the cups refrigerated for up to 3 days in a covered container; the mousse-and-crumb structure doesn’t freeze well after assembly. If you want a lighter option, use reduced-fat cream cheese and light whipped topping for a similar creamy texture.
