Ingredients
  

Boneless skinless chicken breasts
  • 4 boneless skinless chicken breasts
Seasonings and oil
  • 2 tbsp Cajun seasoning or steak seasoning
  • 2 tbsp olive oil
  • 1 tbsp butter for caramelizing onions and sautéing mushrooms
  • 0.25 salt and pepper
Mushrooms and aromatics
  • 8 oz cremini mushrooms sliced
  • 1 onion large, thinly sliced
  • 2 cloves garlic minced
Cheese and deglazing
  • 8 Monterey Jack cheese slices
  • 2 tbsp Jack Daniel's whiskey or chicken broth for deglazing
Garnish
  • 1 fresh parsley for garnish

Method
 

Sear the chicken
  1. Season the chicken breasts generously with Cajun seasoning or steak seasoning. Sear in olive oil in an oven-safe skillet over medium-high heat for 5-6 minutes per side until golden and the internal temperature reaches 165°F, then remove.
Caramelize onions and sauté mushrooms
  1. Melt the butter in the same pan and cook the thinly sliced onions over medium heat for 8-10 minutes until deeply caramelized.
  2. Add the sliced cremini mushrooms and minced garlic, then cook for 4-5 minutes until golden.
  3. Deglaze the pan with Jack Daniel's whiskey or chicken broth, then season with salt and pepper.
Smother and broil
  1. Return the seared chicken to the pan and top each breast with the mushroom and onion mixture.
  2. Lay 2 slices of Monterey Jack cheese over each chicken breast so the topping covers the surface.
  3. Broil for 2-3 minutes until the cheese is melted, bubbly, and golden.
Serve
  1. Garnish with fresh parsley and serve immediately.

Notes

For the closest restaurant-style texture, make sure the skillet is hot before searing and avoid moving the chicken until it releases easily, then broil just until the cheese is golden. Refrigerate leftovers in a sealed container for up to 3 days; reheat gently in a skillet until warmed through and cheese softens. Freezing is not recommended because the mushrooms and cheese can turn watery when thawed. If you want a lighter option, use reduced-fat Monterey Jack (or a blend) while keeping the same cooking times.
