Method
Mix the classic marinade
- Whisk the olive oil, soy sauce, lemon juice, minced garlic, and dried herbs together until smooth and evenly combined.
- Season with salt and pepper to taste, whisking again so the seasoning is fully incorporated.
Marinate
- Place the pork chops in a shallow dish and pour the marinade over them so they’re well coated.
- Marinate for 30 minutes to 4 hours in the refrigerator.
Grill
- Preheat the grill to medium-high heat.
- Grill the pork chops for 5-6 minutes per side until the internal temperature reaches 145°F, with clear visual grill marks building on the surface.
- Transfer to a plate and let rest for 5 minutes before serving, so the juices redistribute.
Notes
For juiciest grilled pork chops, keep the thickness near 1 inch and avoid over-marinating past 4 hours since the lemon juice can start to change texture. Refrigerate leftovers in a sealed container for up to 3 days; freeze cooked chops for up to 2 months. For a lower-sodium option, use low-sodium soy sauce and reduce added salt to taste.
