Method
Make the pumpkin filling
- Blot the pumpkin puree dry, then beat the cream cheese until completely smooth and lump-free.
- Mix in the blotted pumpkin puree, powdered sugar, brown sugar, pumpkin pie spice, cinnamon, ginger, and vanilla until uniform.
- Fold in the graham cracker crumbs, then refrigerate for 30 minutes until firm.
Form and chill the truffles
- Scoop the chilled mixture into 1-inch balls, then freeze for 20 minutes to firm up for dipping.
Dip and top
- Melt the milk or semi-sweet chocolate chips with the coconut oil until smooth.
- Dip each chilled truffle in the melted chocolate, then immediately sprinkle graham cracker crumbs and a pinch of pumpkin pie spice on top.
- Refrigerate until the chocolate coating is set.
Notes
For the best texture, blot the pumpkin puree thoroughly before mixing—excess moisture can keep the filling soft. Store truffles in an airtight container in the refrigerator for up to 5 days; they also freeze well for up to 2 months. For a lighter option, use reduced-fat cream cheese (texture may be slightly softer but still workable).
