  • 0.5 cup unsweetened applesauce

  • 1.5 cups zucchini, grated and squeezed dry

Prep
  1. Preheat the oven to 350°F and line a 12-cup muffin tin with liners or grease well so the batter bakes evenly.
  2. Lightly golden cue: prepare the tin before mixing so the oven is ready when the batter comes together.
Mix dry
  1. Whisk whole wheat flour, all-purpose flour, baking soda, baking powder, cinnamon, and salt in a large bowl until the color looks uniform.
Mix wet
  1. In a separate bowl, beat eggs, honey, melted coconut oil, applesauce, and vanilla until smooth and glossy.
Combine
  1. Add wet ingredients to dry and stir until just combined, stopping as soon as no dry streaks remain to keep the crumb tender.
  2. Fold in the grated zucchini gently until evenly distributed so green zucchini specks stay visible throughout.
Bake
  1. Divide batter among the muffin cups, filling each about ¾ full for proper lift.
  2. Bake at 350°F for 18–20 minutes until a toothpick inserted in the center comes out clean.

Cool

Notes

For best texture, squeeze the grated zucchini dry until it feels less watery; excess moisture can make muffins sink. Store airtight at room temperature up to 2 days or refrigerate up to 5 days. Freeze up to 2 months, thaw overnight in the fridge and warm briefly if desired. For a lower-sugar option, use pure maple syrup with no added sugar (or reduce honey/maple by 1–2 tablespoons) while keeping the total wet volume the same.
