Prep the oven and dry mix
- Preheat the oven to 375°F and line a 12-cup muffin tin with liners.
- Whisk the all-purpose flour, baking powder, baking soda, cinnamon, and salt in a large bowl.
Mix the wet ingredients and combine
- In a separate bowl, beat the eggs, granulated sugar, vegetable oil, plain yogurt, and vanilla extract until smooth.
- Stir the wet ingredients into the dry ingredients until just combined.
Fold in zucchini and blueberries
- Fold in the grated zucchini.
- Toss the blueberries with the 1 tablespoon of flour, then gently fold them into the batter.
Bake and cool
- Divide the batter among the muffin cups, filling each ¾ full.
- Bake for 20–22 minutes at 375°F until golden and a toothpick comes out clean.
- Cool the muffins in the pan for 5 minutes before transferring.
Notes
For best texture, squeeze the grated zucchini very dry so the crumb stays pale gold instead of gummy. Store airtight in the fridge up to 4 days; freeze up to 2 months (thaw overnight in the fridge). For a lighter option, substitute half the vegetable oil with additional plain yogurt while keeping the same total amount.
